Best Meatpie Recipe

    • This year has been very inspiring so far. With the Corona virus pandemic and lock down in different parts of the world, it made most people realise something they've been lacking or something they had but didn't use. I've always loved cooking and trying out new recipes but I never really thought about food blogging. Now I love it . 
    • The Nigerian meat pie is a snack found in almost every eatery in nigeria. It's made up of a pastry with a filling that comprises of carrots, potatoes and minced beef.

    • Ingredients

    • The dough
    • 500g all purpose flour
    • 1 tbsp sugar (optional)
    • 1/2 tbsp baking powder
    • 2 large eggs (1 for dough  and 1 for egg wash)
    • 200g butter  (room temperature)
    • 1/4 cup water (room temperature)
    • 1/2 tsp salt

        The Filling
  • 400g minced beef
  • 1 tbsp oil
  •  salt to taste
  •  bouillon cubes to taste
  •  1 cup water
  •  1/2 tsp ginger 
  • 1 clove garlic (ground)
  • 1/2 tsp thyme
  •  1/2 tsp curry
  •  2 medium carrots  (chopped in cubes)
  • 2 small habanero pepper 
  • 1 medium size onion (finely chopped)
  • 3 small potatoes  (Nigerian Irish potato chopped in cubes)

  •  
    • The Roux 

    • 2 tbsp butter 
    • 2 tbsp flour 

Instructions

         The Filling 
  •  In a saucepan heat the oil and saute onions till it is translucent.
  • Add in the minced beef and break to bits to enable equal cooking.
  • Add the carrots, potatoes and  pepper and stir.
  • Pour in the water and allow to steam for 2 minutes .
  • Stir in the Roux to thicken the sauce.
  • Turn off heat and allow to cool off. 






               The Roux making 

  •  Heat up the water till it starts bubbling
  • At the floor and makes till slightly browned
  • Turn off heat and allow to cool off

  •    The Dough  
  • Sieve flour in a bowl and add baking powder and sugar 
  • Add the butter and mix using fingers to form crumbs
  • Beat one egg well
  • Make a well in the middle and pour in the egg then mix (do not overmix)
  • Pour in 1/4 cup of water and knead. If your dough seems sticky sprinkle more flour till it well incorporated.
  • Shape your dough into a ball and wrap with cling film and refrigerate for about 20 to 30 minutes.
  • Share your dough into 12 small balls equally to make it easy to work with.
  • Roll out dough to about 1/8 inch height and place in your meat pie cutter if you do not have one you could use a small ball with round shape.
  • Put about two spoonfuls of filling into the rolled out dough. 
  • Apply water with your fingers on the edges of the dough and cover. ( if you do not have a meat pie cutter you could use your fork to design the edges of the meat pie.)
  • After doing this for all the doughs  place  them on your baking sheet.
  • Beat the remaining egg and use your fingers or pastry brush to rub on the surface of the meat pie
  • You could poke your meat pies with the fork to enable steam outlet (this is optional)
  • Place in your oven and bake for about 25 to 30 minutes depending on how browned you want them .
  • Your delicious meat pie is ready
  •  Now serve and enjoy with drink of choice
